  • 4 tablespoons ground black pepper (don’t be shy with the pepper!)
  • 3/4 cup chopped sage (fresh from the garden if you’ve got it)
  • 4 cups cornmeal (the good stuff, not that fancy polenta)

Instructions

  1. Prep Your Ingredients: Begin by rinsing your pork liver under cold water. Don’t forget to remove any membranes—this step is essential for a smooth texture.
  2. Blend It Up: In a large bowl, combine the liver, pork fat (or ground pork), ground pork, and finely chopped onion. Use a food processor to blend everything into a smooth paste. It’s okay if you feel a bit like a mad scientist at this point!
  3. Season to Perfection: Add in your salt, black pepper, and chopped sage. Trust me, the sage elevates this dish beautifully. Stir everything until well combined.
  4. Cook the Cornmeal: In a large pot, bring the 2 quarts of cold water to a boil. Gradually whisk in the cornmeal, stirring continuously (no lumps allowed!). Cook for about 15 minutes, until thick and creamy.
