For the basic cottage cheese chips recipe, you’ll need:

- 2 cups full-fat cottage cheese (the texture works better than low-fat)

- 2 large eggs

- 1/4 cup grated Parmesan cheese

- 1/8 teaspoon black pepper
For the 5 variations (choose your favorite or try them all!):
Classic Herb:

Spicy Jalapeño:

- 2 tablespoons finely diced jalapeños

- 1/4 teaspoon cayenne pepper

- 1/2 teaspoon chili powder
Cheesy Ranch:

- 1/4 cup additional shredded cheddar

- 1 tablespoon ranch seasoning mix
Everything Bagel:

- 2 tablespoons everything bagel seasoning
Sweet Cinnamon:

- 1 packet stevia or 1 tablespoon maple syrup
Instructions
Drain any excess liquid from your cottage cheese. In a food processor, combine the cottage cheese, eggs, Parmesan, salt, and pepper. Blend until smooth and creamy, about 1-2 minutes.
Little chef’s tip: Don’t have a food processor? No problem! You can use an immersion blender or even mash everything together with a fork if your cottage cheese is small curd. The texture might be less smooth, but they’ll still taste amazing!
Divide the mixture into portions if you’re making multiple variations. Stir in your chosen seasonings by hand until well incorporated.
My personal confession: I usually end up making at least two variations at once—the Classic Herb for me and the Cheesy Ranch for the kids. It’s like a choose-your-own-adventure snack!
Prepare 1 or 2 baking sheets by lining them with parchment paper or nonstick silicone mats for easy cleanup. This is NOT the time to skip the lining—trust me, I learned this the hard way after spending 20 minutes scrubbing my baking sheet!
Using a tablespoon, drop small rounds of the mixture onto the prepared sheets, keeping them about 2 inches apart. Flatten each drop slightly with the back of a spoon to about 1/4 inch thickness.
Bake in a preheated 375°F oven for 25-30 minutes, or until the edges are golden brown and the centers are set.
