For this beautifully simple boilermaker chili recipe, you’ll need:

Instructions
In a large Dutch oven or heavy-bottomed pot, brown the ground beef over medium-high heat. Break it apart with a wooden spoon as it cooks. This should take about 7-8 minutes until the meat is no longer pink. Don’t rush this step – those browned bits are flavor gold!
Add the diced onions to the pot with the browned beef. Cook for 5 minutes until they become translucent and fragrant. If your pot seems too dry, a splash of olive oil will help those onions soften beautifully.
Sprinkle the chili powder evenly over the meat and onion mixture. Stir well to coat everything, allowing the spices to toast slightly for about 1 minute. You’ll know it’s ready when your kitchen smells absolutely incredible!
Pour in the canned tomatoes with their juices and add the drained kidney beans. Stir everything together until well combined. This is where the chili begins to take shape, and I always feel a little sigh of relief knowing dinner is essentially done.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for at least 30 minutes, though I find an hour gives even better flavor if you have the time. The longer it simmers, the more the flavors meld together. This is perfect for catching up on those little household tasks or helping the kids with their latest art project.
Taste your boilermaker chili and adjust the seasoning if needed. Sometimes I add a pinch of salt or a dash more chili powder depending on my family’s mood that day. Serve hot in bowls with your favorite toppings.
